Soybean oil skin is a traditional soy product. The production process mainly includes the steps of selecting beans, grinding, boiling, peeling and drying. The following is a detailed production method:
Bean selection and soaking
Select high-quality soybeans, crush and peel them, and the peeling rate is as high as 90%.
The peeled soybeans need to be washed 2 to 3 times, and then soaked in clean water until the beans are swollen and have no hard core.
Grinding and filtering
Grind the soaked soybeans with water in a ratio of 1:2, filter and remove the residue, and pour the soy milk into the boiling barrel and boil.
Boil and peeling
Keep the bottom temperature of the pot at 78℃ to 82℃ to form a thin film on the surface of the soy milk.
Every 8 to 10 minutes, use a bamboo piece or a thin rope to gently scrape off the formed film, which is the soybean oil skin.
Soybean milk that cannot be peeled is concentrated into a paste over a slow fire and can be used to make other soy products.
Drying and packaging
Put the peeled wet skin into the pot with boiled soy milk, evenly coat with soy milk and bake until the water content is less than 10%.
Package after cooling, pay attention to moisture-proof to extend the shelf life.
Precautions
Control the heat during the production process to avoid boiling soy milk, so as not to affect the quality of the soy oil skin.
Be gentle when peeling the skin to ensure that the soy oil skin is complete and evenly thick.
