Storage Methods
1. Seal Immediately After Opening
- Once you bring it home and open the bag, don't just leave it on the counter. Fold the top of the bag over and tie it tightly. Then place the entire package inside a zippered food storage bag or transfer it to an airtight container. If your home tends to be humid, double-sealing provides extra protection.
2. Store in a Dry, Well-Ventilated Area
- Avoid placing it near sinks, dishwashers, or windowsills-areas prone to moisture and significant temperature fluctuations. Ideally, store them in upper kitchen cabinets or the back of pantries-higher off the floor for better ventilation.
3. Store away from light
- Direct sunlight darkens color and makes flavors taste stale. If using transparent containers, wrap them in paper to block light-it looks nice too.
4. Refrigerate during humid seasons (remember to seal)
- During southern rainy seasons or humid summers, store dried tofu sticks in sealed bags in the refrigerator-far safer than leaving them in the kitchen. Ensure they are tightly sealed to prevent absorption of other refrigerator odors.
5. Avoid Freezing Unless Necessary
- While freezing may seem moisture-proof, the freeze-thaw cycle causes dried goods to reabsorb moisture and deteriorate in texture. Freezing is unnecessary unless absolutely required.
6. Long-Term Storage with Desiccants or Vacuum Sealing
- For extended storage, use food-grade desiccants or opt for vacuum/nitrogen-flushed packaging. These methods significantly reduce moisture and pest infestation, making them ideal for commercial use or bulk stockpiling.
7. Refrigerate rehydrated tofu skin and consume promptly
- Rehydrated tofu skin is a moist product where bacteria multiply rapidly. Refrigerate it and consume within 48 hours. Even when cooked, it's best to eat it within two days.
8. Avoid repeated soaking and storage
- Do not repeatedly soak a single package of dried tofu sticks, using part and storing the rest. Repeated soaking damages the structure, compromising texture and accelerating spoilage.
9. Handy tip (especially effective in humid areas)
- Place dry tofu sticks in a zippered bag with a food-grade desiccant, then store in an airtight container. This dual moisture barrier works remarkably well.
10. Commercial/Warehouse Considerations (For Restaurants/Wholesalers)
- Upon receipt, inspect for dryness, color, and mold spots. Store off the ground in a ventilated, moisture-proof area using FIFO (First In, First Out). For export or long-distance transport, use vacuum sealing + desiccant + moisture-proof outer packaging.
11. How to Detect Spoiled Bean Curd Sticks
- Discard if it smells sour or moldy;
- Do not use if mold spots appear, color is abnormal, or texture feels damp and sticky;
- Avoid consuming if it develops an off-flavor or poor texture after rehydration.
