Products Description
Soybean foods are foods made primarily from soybeans and can be categorized into non-fermented and fermented products. They are rich in nutrients and offer a variety of health benefits.
Main Categories
Soy foods are generally divided into non-fermented soy products and fermented soy products:
- Non-fermented soy products: These include soy milk, tofu, dried tofu, shredded tofu, yuba (dried bean curd sticks), and tofu skin. They typically have a high protein content (5%–45%) with moderate amounts of fat and carbohydrates.
- Fermented soy products: These include products like doubanjiang (chili bean paste) and soy sauce. During production, microorganisms are used to create distinctive flavors through fermentation. Some of these products have a high salt content and should be consumed in moderation.
Healthy Soybean Foods Contain Dietary Fiber and Functional Components
Dietary Fiber
Soybeans are rich in both soluble and insoluble dietary fiber. Soluble fiber can bind to intestinal cholesterol and help lower bad cholesterol (LDL) levels in the blood, while insoluble fiber promotes bowel movement and helps prevent constipation.
Soy Saponins and Phytosterols
These compounds help inhibit cholesterol absorption. Regular consumption can reduce the risk of hyperlipidemia and hypertension, making them beneficial for cardiovascular health. The World Health Organization recommends a daily intake of 25–35 grams of soybeans and soy products.
Blood Sugar and Weight Control
Soy protein and dietary fiber provide a strong sense of fullness, which helps slow the rise of post-meal blood sugar levels. At the same time, soy foods are relatively low in calories, making them suitable for people with diabetes or those looking to lose weight.
Who should not eat soy products?
People with allergies
Mild allergic symptoms include itching, rashes, diarrhea, and vomiting. Severe allergic reactions can cause difficulty breathing, laryngeal edema, and even life-threatening anaphylactic shock.
People with thyroid dysfunction
If people with hypothyroidism do not get enough iodine daily, consuming large amounts of raw soy or unprocessed soy products may aggravate their thyroid dysfunction, leading to symptoms such as fatigue, intolerance to cold, and weight gain.
People with weak digestive function
The elderly, children, those with gastrointestinal disorders, and those recovering from surgery may experience symptoms such as bloating, excessive flatulence, abdominal pain, and diarrhea if they consume soy products excessively.
