How to Distinguish the Quality of Soy Products?

The core of identifying the quality of soy products lies in four fundamental methods: look, smell, touch, and taste. Combine these with the characteristics of different soy products, focusing on freshness, additives, and texture.

1. Identification Methods

Regardless of the type of soy product, these four steps form the foundation for quickly eliminating substandard or spoiled items.

  • Visual Inspection: High-quality soy products exhibit natural colors (e.g., creamy white for tofu, pale yellow for dried bean curd sticks), free from mold spots, discoloration, or abnormal hues. They maintain intact form without crumbling or fragmentation. Surfaces should show no excessive moisture or slimy residue.
  • Smell the aroma: Fresh products emit only a pure bean scent, free of sourness or other off-odors. Any unusual smell indicates spoilage or excessive additives.
  • Feel the texture: High-quality tofu should feel firm and springy to the touch, not sticky. Bean curd sticks should be dry and crisp, not damp. Dried tofu should have a smooth texture without coarse grains.
  • Taste: If sampling is permitted, high-quality products should be tender, chewy, and rich in bean flavor, without bitterness or sourness. Inferior products may be mushy, lacking elasticity, or have off-flavors.

2.Targeted Identification Techniques for Different Soy Products

Type of Soy Product Key Identification Points Signs of Poor Quality
Fresh Tofu (Soft/Hard)

Soft Tofu: Milky white in color, smooth surface, no water leakage when shaken;

Hard Tofu: Firm texture, no honeycomb holes on the cut surface.

Gray/yellowish color, sticky surface with excessive water, large holes on the cut surface, collapses without springing back when pressed.
Dried Yuba Natural pale yellow color with luster, makes a crisp sound when broken, no crumbs; becomes tender and elastic (not mushy) after soaking. Abnormally white (may be bleached) or black, feels damp with excessive crumbs when broken; sticky with off-odors and easy to fall apart after soaking.
Tofu Skin/Dried Tofu Fresh Tofu Skin: Pale yellow, flexible texture, no wrinkling or sticking; Dried Tofu: Smooth surface, no looseness when sliced, uniform cross-section. Tofu Skin: Sticky with mold spots; Dried Tofu: Loose texture, easy to crumble when sliced, impurities or holes in the cross-section, sour smell.
Soy Milk (Liquid) Light milky white color, no layering or sediment (slight wall clinging is normal); has a rich bean aroma after heating, no burnt smell. Dark or turbid color, layers and sediment after standing, sour taste and abnormal froth (may be spoiled) after heating.

3. Additional Considerations

When purchasing pre-packaged soy products, carefully examine the ingredient list to avoid excessive additives masked by appealing packaging.

  • Simpler ingredients are better: High-quality products list only soybeans and water, or contain minimal natural coagulants. Avoid products with excessive preservatives, flavorings, or colorants (e.g., tartrazine).
  • Check production date and shelf life: Fresh soy products have short shelf lives. Prioritize items with recent production dates and proper storage conditions to avoid spoilage from nearing expiration or improper storage.

4. Precautions

If soy products are priced significantly below market average, they may be made from inferior soybeans or contain excessive additives to reduce costs. Exercise caution when purchasing such items.
For heavily processed soy products, pay extra attention to fat and salt content: Quality products are not greasy and have moderate seasoning. Inferior products may have an oily surface and use strong flavors like excessive saltiness or spiciness to mask the bean taste.
