Bean curd stick is a soybean product. It is made by boiling soy milk and allowing it to simmer for a period of time. A thin film gradually forms on the surface, which is then lifted off. After being lifted, the film hangs down into strip-like shapes, and is finally dried into the finished product.

Bean curd stick contains about 55% protein, 11% carbohydrates, 26% neutral lipids, 2% phospholipids, 2% ash, and 9% moisture. It is rich in protein but low in water content, because the drying process during production concentrates the essence and nutrients.

Here are two common ways to cook dried tofu sticks:

 

Cold Dressed Bean Curd Stick

 

Ingredients:

Dried bean curd stick, cucumber, cilantro, minced garlic, chili powder, light soy sauce, vinegar, sugar, sesame oil

 

Instructions:

  1. Break the dried bean curd sticks into sections and soak them in 40°C warm water with 1 spoon of salt for 20 minutes.
  2. Blanch the softened bean curd sticks in boiling water for 1 minute, then transfer to cold water.
  3. Julienne the cucumber and place it at the bottom of a plate. Arrange the bean curd sticks on top.
  4. Heat oil until hot and pour it over the minced garlic and chili powder to release the aroma.
  5. Mix light soy sauce, vinegar, sugar, and sesame oil into a dressing, then pour it over the bean curd sticks.
  6. Garnish with cilantro and serve.

 

Stir-fried Bean Curd Stick with Pork Slices

 

Ingredients:

Bean curd stick (yuba), pork tenderloin, chili peppers, oyster sauce, dark soy sauce, cornstarch, light soy sauce, scallions, ginger

 

Instructions:

  1. Slice the pork tenderloin thinly.
  2. Marinate with 1 spoon of light soy sauce, ½ spoon of dark soy sauce, and 1 spoon of cornstarch. Let sit for 10 minutes.
  3. Heat a wok with oil, stir-fry the pork slices over high heat until the color changes, then remove.
  4. Keep a little oil in the wok, sauté scallions and ginger until fragrant, then add bean curd stick and chili peppers.
  5. Season with oyster sauce and salt.
  6. Return the pork slices to the wok, stir-fry everything together until evenly coated, and serve hot.
